Pavich Organic Raisin Rice Pudding

1/3 cup raw sugar (turbinado)
2 tablespoons cornstarch
1/8 teaspoon salt
2 cups low-fat milk
2 egg yolks, slightly beaten
2 tablespoons soft butter or 1 tablespoon canola oil
2 teaspoons vanilla
2 cups cooked rice
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 teaspoon cinnamon
1 cup Pavich Organic Thompson Seedless Raisins

In a saucepan, combine sugar, cornstarch, and salt. In a separate bowl, combine milk and egg yolks, then slowly stir into sugar mixture. Bring to boil over medium heat, stirring constantly. When boiling point is reached, stir one minute more or until mixture thickens. Remove from heat and add butter or oil, vanilla, rice, spices, and raisins. Mix well, cover, cool and chill. Makes 8 to 10 servings
