Pavich Organic Grape, Chicken & Wild Rice Salad
SALAD
½ lb. wild rice
2 cups cooked, cubed chicken (you may substitute with tofu)
½ lb. sliced water chestnuts, drained, salt & pepper to taste
½ lb. Pavich Organic Seedless Green Grapes
¾ cup Pavich Organic Cashews

DRESSING
½ cup mayonnaise
1 teaspoon lemon juice
½ teaspoon nutmeg
¼ cup nonfat milk
¼ teaspoon tarragon |
| Cook rice until grains just start to open. Add the chicken, onion, water chestnuts, and
seasoning. Prepare dressing and fold into rice mixture; chill. Just before serving, fold
in the Pavich grapes and cashews. Makes 8 servings. |
